I'm Chris, and I grew up in northern Mexico, making flour tortillas with my grandmother. Hands covered in dough, the griddle sizzling hot. Those afternoons taught me something no recipe book could: real flavor has no shortcuts.

Food became personal

Years later, I lost two uncles I loved. Both were young, and both had struggled with diabetes. It changed the way I thought about food.

In 2017, working with my doctor, I switched to a low-carb, keto way of eating.

But there was a problem.

The low-carb versions of the foods I loved usually tasted like a compromise. I didn't want to give those foods up. I wanted to make them better.

It started with a tortilla

So I went back to the flour tortilla I grew up with.

My wife joined me, bringing her own love of cooking shaped by her childhood in France and her grandmother's kitchen. We spent more than two years and hundreds of attempts obsessing over texture, flavor and every ingredient.

We kept going until it tasted like something we would choose even if the macros didn't matter.

That tortilla became Hack The Bread's first product and grew into one of Mexico's best-selling and best-reviewed keto tortillas online.

Now, pancakes

We're bringing that same philosophy to the United States.
